Vegetable Sweet Corn Soup is easy to prepare at home and also healthy. It combines cooking the mixture of vegetables of our choice and making it tastier with some tips and tricks.Soups are so healthy and can be easily prepared. Whenever the weather is dull, I would like to try some soup variety at home. Initially, I was preparing the tomato soup alone at home. When I visited my friend’s place, I got introduced to different varieties of soup with simple recipe tips. Sweet Corn soup is one such variety and is always healthy to have home made soups
Ingredients to make Vegetable Sweet Corn Soup:
Preparation Time: 10 Mins| Cooking Time : 20 Mins | Serves: 2-3
- Vegetables – 1 cup (Carrots, Beans, Cabbage, Peas) Finely Chopped
- sweet corn -1/2 cup (100grams)
- Ginger – 1tsp
- garlic – 1tsp
- onion -1 medium (finely chopped)
- spring Onions
- coriander leaves
- corn flour – 2 tbsp
- pepper powder as required
- Water as required
- Salt as required
- oil as required
Method:
- In a medium saucepan, add oil
- once hot, add finely chopped ginger and garlic
- put in onions. saute it for a minute
- add finely chopped vegetables (carrots, beans, cabbage, peas) in the pan. cook for 2 minutes
- add sweet corn (1/4 cup) in the pan
- Mix it well and allow it to cook for 5 minutes. saute Occasionally
- take a small mixie jar, add sweet corn with 1/4 cup of water
- grind it into fine paste (Sweet Corn Paste)
- add the Sweet corn paste in the pan
- pour 1/2 cup water in the pan.
- stir it well.let everything cook together for 15 minutes
- in a small cup, make corn flour paste (mix corn flour (2 tbsp + 3 tbsp water) into fine paste without any lumps)
- add this paste in the pan
- Let it boil for 3 minutes
- Sprinkle spring onions and coriander leaves. turn off flame
Serve hot!!!
