Spicy Moroccan Couscous

Couscous is a type of pasta famous over North African areas. Couscous is a staple food for North African areas and spread over some part of France. There are many types available in the market and sold with different flavor packets. I have done this cuisine with Pearled Couscous with Garlic flavor. It is a one-pot recipe and can be easily cooked with simple steps. I was introduced to this recipe from my sister, who stayed in Europe for few years. Being vegetarian, this dish is more tempting to taste at European and Moroccan areas. I got the recipe from her and tried at home for lunch. Everyone in the family enjoyed the different flavorful cuisine at home. Initially, thought this dish will not be sufficient for Lunch menu, but, will be more than sufficient as I add more vegetables and channa in the bowl

Ingredients to make Spicy Moroccan Couscous:

Preparation Time: 10 mins | Cook Time: 30 mins | Serves: 2-3

  • Channa – 1 Cup ( 200gms) ( Soak it overnight:Cook it for 6 whistles)
  • Couscous – 1 pkt
  • Vegetables – 1 cup (carrots, broccoli, beans, corn)]
  • Onion – 1 medium sliced
  • Tomato – 4 (cherry tomatoes)
  • Cumin Powder – 1 tsp
  • Coriander Powder – 1 tsp
  • Garam Masala Powder – 2 tsp
  • Water – 2 1/2 Cups
  • Salt as required
  • Olive Oil as required

Method:

  • Heat a pan, add oil. Once hot, add Onions and saute it till becomes translucent
  • Add tomatoes, mix it well. After a minute, add cumin powder, coriander powder, garam masala powder and salt to taste. Saute everything together in low flame
  • Put all the vegetables of our choice and add 1/2 Cup of water in it. Close the pan with lid, saute it occasionally. Allow it to cook for 10 minutes ( Can also add Peas, Capsicum, potatoes, cauliflower of choice)
  • Pour 1 1/2 cup water in the mix and let it boil in 1-2 minutes
  • Now add Couscous into the pan, stir it together. Let it cook for 8 minutes. Stir occasionally
  • As I am using flavored packed, its time for me to add the garlic flavor powder (included with couscous packet). Mix it, close the lid and allow this to cook for 4-6 minutes
  • Once done, switch off the flame, add cooked chickpeas in the mixture and let it sit for 5 minutes before serving
  • Spicy Vegetable Moroccan style Couscous is ready to Serve!!!
