Kaju Katli ( Cashew Burfi )

Kaju Katli is always my all time favorite sweet. Since childhood, myself and my sister used to fight a lot for sharing this sweet during diwali times. Initially, I thought, making this recipe is really a lengthy process. But, when i was googling the procedure of kaju katli, got to know about the simple steps in making it. nowadays, I used to this one once in a month as I am now practiced to do this recipe within a matter of five minutes. This sweet really requires only four ingredients with the end result of delicious sweet


  • Cashew Nuts- 1 cup (250 gms)
  • sugar – 1/2 cup (125 gms)
  • water – 3 tbsp
  • ghee – 2 tbsp
  • cardamom powder – 1/8 tsp

Pre task:

  • Grind the cashew nuts into fine powder (use “pulse” mode in mixie. also make sure not to form oily)
  • Similarly, grind the sugar into powdery texture (this step helpa to save time for this kaju katli preparation)
  • Prepare a plate with butter paper smeared with some ghee on top. Keep it ready


  • Heat a pan, add powdered sugar with little water. allow the sugar to dissolve in water
  • Once the sugar forms one-sting consistency (as we use powdered sugar, it will create one-sting consistency in 3-5 minutes)
  • add powdered cashew nut powder and mix well
  • Once the cashew powder is mixed, add cardamom powder and a tbsp of ghee
  • saute continuously for 5-7 minutes in medium flame till the cashew and sugar mixture forms soft dough consistency
  • switch off flame and transfer the content in the ghee greased plate
  • after 2 minutes, take a flat bottomed vessel, grease ghee at the back of the vessel and spread it out evenly ( alternatively, use chapathi rolling pin applying ghee over it)
  • cut into desired shape leaving corners
  • Kaju katli is ready!!!
