Mixed Vegetable Kurma

Vegetable kurma is a perfect side dish for parottas and rotis. It is a simple one-pot gravy including many vegetables. Still, I used to prepare this dish Occasionally and not in my regular weekly lists. Also, I did not include fennel seeds and substituted it with cumin seeds as I dont like that flavor.
