Mixed Vegetable Kurma

Vegetable kurma is a perfect side dish for parottas and rotis. It is a simple one-pot gravy including many vegetables. Still, I used to prepare this dish Occasionally and not in my regular weekly lists. Also, I did not include fennel seeds and substituted it with cumin seeds as I dont like that flavor. Sharing below the simple mixed vegetable kurma recipe

Ingredients:

preparation Time: 10 mins | Cook time : 20 mins

  • Mixed Vegetables – 1 cup ( carrots, beans, cauliflowers,potato)
  • onion – 2 medium
  • tomatoes – 1 medium
  • turmeric powder – 1 pinch
  • ginger garlic paste – 1 tbsp
  • cumin powder – 1 tsp
  • coriander powder -2 tsp
  • cumin seeds – 1 tsp
  • bay leaf – 2,cinnamon stick, cloves -2
  • coriander leaves
  • salt as required
  • oil as required
  • water as required

to grind:

  • coconut scrapped – 2 tbsp
  • green chilies – 2
  • pottukadalai/roasted bengal gram – 2 tsp

Method:

  • Grind the “to grind” ingredients into fine paste and keep it aside
  • in a pan, add oil. once hot, add cumin seeds and let it splutter
  • add ginger garlic paste carefully and saute it
  • onions are added in the pan and cook till becomes glossy
  • put in tomatoes now and saute well for 2-3 minutes
  • add turmeric powder, cumin powder, coriander powder and salt and combine it well
  • let everything cook together for 2-3 minutes
  • mix vegetables in the pan and allow it cook for 10-12 minutes
  • saute it Occasionally without getting burnt

  • Coconut paste is added now and mix it well
  • cook for 3-5 minutes in low flame
  • garnish with coriander leaves and switch off flame
  • mixed vegetable kurma is ready!!!
