
Vegetable kurma is a perfect side dish for parottas and rotis. It is a simple one-pot gravy including many vegetables. Still, I used to prepare this dish Occasionally and not in my regular weekly lists. Also, I did not include fennel seeds and substituted it with cumin seeds as I dont like that flavor. Sharing below the simple mixed vegetable kurma recipe
Ingredients:
preparation Time: 10 mins | Cook time : 20 mins
- Mixed Vegetables – 1 cup ( carrots, beans, cauliflowers,potato)
- onion – 2 medium
- tomatoes – 1 medium
- turmeric powder – 1 pinch
- ginger garlic paste – 1 tbsp
- cumin powder – 1 tsp
- coriander powder -2 tsp
- cumin seeds – 1 tsp
- bay leaf – 2,cinnamon stick, cloves -2
- coriander leaves
- salt as required
- oil as required
- water as required
to grind:
- coconut scrapped – 2 tbsp
- green chilies – 2
- pottukadalai/roasted bengal gram – 2 tsp

Method:
- Grind the “to grind” ingredients into fine paste and keep it aside
- in a pan, add oil. once hot, add cumin seeds and let it splutter
- add ginger garlic paste carefully and saute it
- onions are added in the pan and cook till becomes glossy
- put in tomatoes now and saute well for 2-3 minutes
- add turmeric powder, cumin powder, coriander powder and salt and combine it well
- let everything cook together for 2-3 minutes
- mix vegetables in the pan and allow it cook for 10-12 minutes
- saute it Occasionally without getting burnt
- Coconut paste is added now and mix it well
- cook for 3-5 minutes in low flame
- garnish with coriander leaves and switch off flame
- mixed vegetable kurma is ready!!!
