Vegetable Sandwich is a simple breakfast item. As We Can Include All Vegetables Of Our Choice, it is perfectly healthy to include in breakfast menu. I included carrots, beans, potato, peas for preparing the vegetable sandwich. In this recipe, i prepared it without using any sandwich maker machine. I did not include any sauce while preparing the sandwich. But, can customize with favorite sauce according to taste

Ingredients to make vegetable sandwich:

Preparation Time: 10 mins || Cook Time: 20 mins || Serves:2-3

  • Bread Slices -8 ( for 4 sandwiches)
  • Mixed vegetables – 1 cup ( i Took Carrots, beans, cabbage, peas)
  • Potato – 2 medium (pressure Cooked)
  • cheese sheets -4 (one each)
  • Cumin/ Jeera Seeds – 1 tsp
  • onion – 1 medium (finely chopped)
  • turmeric powder – 1 pinch
  • cumin powder – 1/2 tsp
  • coriander powder – 1 tsp
  • chili powder – 1 tsp
  • garam masala – 1 tsp
  • Butter as required
  • water – 1/4 cup
  • oil as required
  • salt as required
  • coriander leaves

Method:

Step 1 – Stuffing Preparation

  • In a pan, add oil. Once hot, add cumin seeds and allow it to splutter
  • Add a pinch of turmeric powder along with Finely chopped onions. Saute it well for a minute
  • mixed vegetables are added in the pan
  • Put in all masala powders – cumin powder, coriander powder, garam masala powder, chili powder. combine everything together
  • pour 1/4 cup of water and let the vegetables get cooked (it will take 5-7 minutes). Saute occassionally
  • Cooked potato is added, mash it together with the vegetable mixture
  • switch off flame. garnish with coriander leaves

Vegetable Stuffing is ready

Step 2- Sandwich Preparation:

  • take a bread slice, place 3-4 tbsp of prepared stuffing
  • layer it with a cheese slice (according to taste, cheese is added more)
  • place another slice of bread on top

if preparing 3 layer sandwich, repeat doing stuffing and top with another slice of bread

  • heat a dosa tawa, apply butter
  • place the prepared stuffed bread for roast
  • position a plate or flat bottomed vessel on top of sandwich
  • allow it to cook for 3-5 minutes
  • Flip the bread upside down for the bottom part to get cooked
  • take out when both sides are roasted

Mixed Vegetable Sandwich is ready to serve!!!
