Vegetable Pulao Recipe

Vegetable Pulao Recipe (instant Pot) is a quick and easy rice variety combining vegetables of our choice along with rice. In this recipe, I used instant pot to cook the pulao which is ultimately, the quickest way to make pulao. I followed very easy steps of cutting vegetables, combine everything along with rice and some spices inside the pot, set the pressure cook mode. It is as simple as that. Even with pressure cooker, it is same way with a monitoring to turn off flame after the required cook time

Ingredients to make Vegetable Pulao Recipe:

preparation Time: 10 mins | Cook Time: 20 mins | Serves: 2-3

  • Basmati Rice – 1 cup (250grams)
  • Onion – 2 medium (Sliced)
  • Vegetables – 1 cup (Sliced) -Carrots, beans, potatoes, cauliflower
  • peas – 1/4 cup
  • Green chili – 2 (Slit)
  • cumin seeds – 1 tsp
  • curd -1/2 cup (120ml)
  • chili powder – 1tsp
  • coriander powder -1 tsp
  • cumin powder -1/2 tsp
  • turmeric powder – 1/8 tsp
  • garam masala powder – 1 tsp (optional)
  • salt as required
  • mint leaves – 4-5
  • Masala Items – bay leaf -2, cinnamon stick – 2, cloves -4 , star anise -1
  • Oil/Ghee as required
  • Water – 1 cup (250ml)

Note: If Using Frozen Peas, Take It Outside Refrigerator, Soak In Water For 30 Minutes. If Using Dry Peas, Soak It Overnight before use

Instant Pot Method Do Not Require Pre-Soaking Basmati Rice. If using pressure cooker method, pre-soak basmati rice for 30 minutes before starting the process


  • Set instant pot in “Saute” Mode
  • add a tsp of oil/ghee
  • add cumin seeds and let it splutters
  • sliced green chilies and onions are added and saute it well
  • add masala items -bay leaf, cinnamon stick, clove and star anise
  • mixed vegetables can be added in the pot
  • put in cumin powder, coriander powder, garam masala powder, turmeric powder along with required salt
  • combine it well
  • pour curd on top and mix it to spread out evenly with the vegetables
  • Add A Cup Of Water
  • Basmati Rice Is Washed Well And Added
  • Close the instant pot with Lid
  • Switch to Pressure Cook mode and set it for 4 minutes
  • Pressure Builds in 5 minutes, pressure valve pops up and Display shows Turned ON
  • Times starts to appear in some time and started to count down (4..3..2..1..0)
  • After 4 minutes, a beep sound comes indicating to turn off
  • it automatically switches to “Keep Warm”. (Its our wish to cancel it or leave as such)

Approximately, it takes 15-20 minutes to release the pressure

  • when pressure valve lowers,remove the lid
  • gently mix the vegetable pulao and serve hot with Raita
