Palkova Recipe

Palkova is a mouth watering Traditional Indian milk Sweet suitable for all Occasions. It requires only two ingredients such as milk and sugar. In this recipe, I replaced sugar with jaggery powder. Preparing the recipe is literally a time-consuming process. But, its still worth a try to taste this delicious sweet out of milk. Sharing below the recipe i followed with timely instructions

Ingredients to make palkova Recipe:

  • Milk (full fat milk) – 1 litre
  • Jaggery powder -200 grams
  • Cardamom powder-1/8 tsp
  • Lemon Juice – 1 tbsp
With 1 Litre of Full Fat Milk, 200 grams of Palkova can be prepared

Method:

Preparation Time: 5 mins || Cook Time: 1 hour

  • In a heavy Bottomed vessel (Preferably, non-stick pan), pour 1 litre of full fat milk and boil it
  • Generally, it takes 5 minutes to boil the milk

After 5 minutes(from the beginning),

  • cook for 15-20 minutes and stir frequently
  • boil the milk on medium flame without getting burnt at the bottom

After 25 minutes (From the beginning),

  • add 1 tbsp lemon juice.Stir it well. (this helps to curdle the milk quickly, to prepare palkova easily)
  • Scrap the creamy layer on the sides Occasionally and keep stirring in regular intervals
  • Milk starts to curdle, stir continuously
  • When the milk reduces to half, add a cup (200grams) of jaggery powder/sugar
  • Keep stirring Occasionally for every 5 minutes

After 45 minutes (from the beginning),

  • Milk thickens well, keep stirring
  • Add a pinch of cardamom powder and mix it well
  • Milk Thickens And Curdles More
  • Keep Stirring And Scrapping Over The Edges

After 55 minutes (from the beginning),

  • Milk thickens forming palkova texture
  • Keep boiling on medium flame without getting burnt at the bottom
  • Palkova is ready!! Serve it and Enjoy!!

ADDITIONAL TIPS:

  • Traditional palkova is prepared with just milk and sugar. Optionally, add cardamom / saffron can also be added for flavour.
  • Cook on low to medium flame to prevent milk from burning.
