Mixed Vegetable Paratha

Mixed Vegetable Paratha is a combination of preparing chapathi dough with a stuffing inside. This recipe follows four steps such as making chapathi dough, pressure cooking vegetables, cooking mixed vegetable stuffing and finally combining everything to form parathas. As including more vegetables with whole wheat flour, this recipe is so healthy and can be served without any side dish

Ingredients to make Mixed vegetable Paratha:

For Dough Preparation:
  • Whole Wheat Flour – 1 Cup (500 Grams)
  • Salt as required
  • water as required
For Stuffing:
  • Mixed Vegetables – 1 cup(200 grams) ( I took Carrots, Beans, Potatoes, Peas)
  • Cauliflower florets- 1/2 cup (100 grams)
  • cumin seeds – 1 tsp
  • turmeric powder – 1/8 tsp
  • garam masala powder – 1 tsp
  • chat masala powder – 1 tsp
  • coriander powder – 1 tsp
  • ginger garlic paste – 1 tbsp
  • chili powder – 1 tsp
  • few coriander leaves
  • rice flour – 2 tbsp
  • oil as required
  • salt as Required
  • Water as required

Note:

  • If Using Frozen Peas, Take It Outside Refrigerator, Soak In Water For 30 Minutes. If Using Dry Peas, Soak It Overnight. If Using Fresh Peas, use directly
  • Cauliflower florets are Thoroughly washed and place it in boiled water for 20 minutes

Method:

Step 1 – Chapathi Dough preparation:
  • Take a bowl, add whole wheat flour, salt. Mix it once
  • pour water partly and start combining with the flour

500 grams of flour approximately requires 250ml of water for dough preparation

  • knead well for 3-5 minutes (this step helps to give softness for parathas)
  • close it with the lid or wrap it well
  • keep this aside for 20 minutes
Step 2 – Pressure Cooking Vegetables:
  • Take a pressure cooker and add all the vegetables
  • add water (1/4 cup) along with a tsp of salt
  • close it and wait till pressure builds
  • put the weight and wait for four whistles
  • once the pressure subsides, take out the weight and open the cooker
  • filter the cooked vegetables to remove excess water
  • mash it well using a potato masher
  • keep this aside

now, we have both chapathi dough and stuffings are ready!!!

Step 3 – Cooking Mixed Vegetable Stuffing:
  • take a pan, add oil
  • once hot, add cumin seeds and allow it to splutter
  • gently add ginger garlic paste. saute it once
  • put in chili powder, coriander powder, garam masala powder, chat masala powder and a pinch of turmeric powder
  • Combine Everything Together
  • Slowly Add Cooked Vegetables Along With Required Salt
  • Mix It Well And Let It Cook For 3-5 Minutes
  • ( optionally add 2 tbsp of rice flour to increase thickness )
  • sprinkle few coriander leaves and turn off flame
Step 4 – Preparing Mixed Vegetable Parathas:
  • split the dough into five equal sized big balls
  • in a flat surface, dust with some flour, start making small round shape with thick base using rolling pin
  • place prepared mixed vegetable stuffing(2 tbsp), fold it similar to pleats and close it
  • dust with some flour on both sides, place it upside down and start making round shape once again
  • heat a dosa tawa
  • once hot, add some oil/ghee on the surface evenly
  • place the prepared paratha for cooking
  • allow it to cook for 3-5minutes until lower part turns golden brown
  • flip upside down and cook the other side
  • take out when both sides are properly cooked

Mixed Vegetable Paratha is ready to serve!!!
