Vegetable Sizzler Is A Combination Of Rice Or Noodles, Stir Fry Vegetables And Fries Or Patties As Per Choice Mixing With Sizzler Sauce. The Process Involves Preparation Of Sizzler Sauce recipe, Rice, Cooking Vegetables And Making French Fries Or Patty. In this recipe, included rice and potato beetroot patties.It Is A Bit Lengthy Process But Worth The Try For The Delicious And Mouth-Watering Super Hot Sizzlers
Ingredients to make Vegetable Sizzlers:
Preparation Time: 15 mins || Cook Time: 1 hour
For Sizzler Sauce Preparation:
- Tamarind Water – 1/4 cup (pre-soak Small ball sized Tamarind in 1/4 cup of water)
- Cumin powder – 1 tsp
- sugar – 3 tbsp
- chili powder – 2 tbsp
- apple cider Vinegar – 1/4 cup
- tomato Sauce – 2 tsp
- garlic pods – 3 (finely chopped)
- pepper powder -1/8 tsp
- cloves -3
- bay leaf – 1
For Making Stir Fry Vegetables:
- Mixed Vegetables – 1 cup (Beans, carrots, baby corn, bell peppers/ Capsicums)
- Cauliflower florets – 1/2 cup
- pepper powder – 1/8 tsp
- ginger garlic paste – 1 tsp
- salt as required
- oil as required
For Cooking Jeera and Corn Rice:
- Basmati Rice – 1 cup (200grams) – Pre-cook basmati rice with water:rice ratio – 2:1
- cumin seeds – 1 tsp
- sweet corn -1/4 tsp
- pepper powder – 1 tsp
- coriander leaves
- Salt as required
- oil as required
For making Potato Beetroot Patties:
- potato – 2 medium (cooked)
- beetroot -3 tbsp grated
- bread crumbs
- cumin powder -1 tsp
- salt as required
- oil as required
Method:
Step 1 – Sizzler Sauce Preparation:
- in a pan, add all “Sizzler Sauce Preparation” ingredients
- Cook on medium flame for approximately 5-7 minutes
- Turn off flame and filter it
- Sizzler sauce is ready now. Keep this aside
Step 2- Stir Fry Vegetables:
- Pressure Cook (2 whistles) or Steam cook (10 minutes) all the vegetables along with a pinch of salt
- DO NOT OVERCOOK THE VEGETABLES
- Once vegetables are partially cooked, filter to remove excess water
- in a pan, add oil
- once hot, add cumin seeds and let it splutters
- add a tsp of ginger garlic paste. Saute it once
- Partially cooked vegetables are added now with the required pepper powder
- let everything cook together for 2-3 minutes
- Stir fry vegetables are ready now. Keep this aside
Step 3- Cooking Jeera and Corn Rice:
- in a pan, add oil
- once hot, add cumin/ jeera seeds and let it splutters
- add sweet corn, coriander leaves and salt to taste
- allow it to cook for 3 minutes or until corn is cooked
- add cooked basmati rice gently
- mix it well without breaking the rice
- Jeera and Corn rice is ready now. Keep this aside
Step 4- Making Potato Beetroot Patty:
- In a bowl, add cooked potatoes and mash it well
- add grated beetroots, coriander leaves, cumin powder and salt
- combine it well, make patties in desired shape
- roll it over the bread crumbs
- repeat the process to make four patties
- heat a flat bottomed tawa
- add oil, shallow fry the patties
- flip upside down when bottom part turns golden brown
- take out once patties are cooked well
- Potato Beetroot Patties are ready now. Keep this aside
Step 5- Assembling Vegetable Sizzlers:
we have everything ready now to assemble sizzlers – Sizzler Sauce, Stir Fry Vegetables, Jeera and Corn rice, Beetroot Potato patties, few cabbage leaves
- Heat a sizzler skillet (used cast iron skillet now)
- sprinkle cabbage leaves
- rice is added one side and stir fry vegetables on other side with patties on top
- carefully layer the top with sizzler Sauce, it will leave some smoke
- Serve hot!!!
