Soya Pulao is a healthy proteinaceous Rice variety. In this recipe, Soya chunks or soya nuggets are cooked and mix it together with rice with some spicy touch. Soya pulao is a complete balanced meal for the lunch menu as it includes protein rich Soya, ghee and rice. This follows simple steps such as soaking soya chunks in water, marinating it and mixing well with rice. optionally, vegetables can also be added along with Soya chunks. this is entirely an One pot recipe and here comes the steps to make it
Ingredients to make Soya Pulao:
- Basmati rice – 1 cup
- soya chunks – 1/2 cup
- onion – 2 medium (finely chopped)
- green chilies- 2
- Tomato – 2 medium (finely Chopped)
- Chilli powder – 2 tsp
- ginger garlic paste – 1 tbsp
- turmeric powder – 3/4 tsp
- cumin seeds – 1 tsp
- curd – 1/4 cup
- masala items – Bayleaf-1, cloves -3, cinnamon stick -1, cardamom -2
- mint leaves
- coriander leaves
- salt as required
- oil/ghee as required
Method:
Step 1- Marination of Soya Chunks:
Preparation Time: 10 mins | Wait Time: 20 mins | Cook Time: 20 mins
Pre-soak Soya Chunks in water for 15 minutes
- in a bowl, add curd (1/4 cup), chilli powder (1 tsp), Turmeric powder (1/4 tsp), salt (1 tsp), garam masala powder (1/2 tsp)
- mix it well without making any lumps
- squeeze the soya chunks(bulged) out of soaked water and add it in the curd mixture
- combine it well
- keep this aside for 20 minutes for marination. soak Basmati Rice(1 cup) in water for 20 minutes as well
Step 2- Making Soya Pulao:
- in a pressure cooker, add oil/ghee
- once hot, add cumin seeds and let it splutters
- add masala items- bay leaf, cinnamon, cardamom and cloves. Saute it once
- put in finely chopped onions and saute it until turns translucent
- add tomatoes and cook for 2 minutes
- add turmeric powder (1/4 tsp), Chilli powder (1 tsp), garam masala powder (1 tsp) and Salt as required
- cook for 2-3 minutes
- sprinkle handful of mint leaves and coriander leaves
- add marinated soya chunks. cook for 5 minutes
- add the soaked basmati rice (filtered from water) and pour water (1 1/2 cup)
- close with the lid and pressure cook for 2 whistles
- when pressure subsides, remove the weight
- serve hot with raita
