Paneer Lababdar is one of the paneer variety side dish for rice and roti/chapathi. Paneer Lababdar is a popular North Indian gravy recipe made with cottage cheese in creamy and rich tomato and onion gravy. This recipe is different from usual Paneer Butter Masala. It can be served with Chapathis/Rotis/Naan for lunch as well as dinner. Typically it is made with mix of vegetables and paneer tossed and cooked in cashew based tomato onion base. I used to make paneer butter masala at home whenever i think of paneer side dishes. suddenly, thought of making something different. so i searched for paneer side dishes in restaurant menu choices and quickly grabbed the recipe from google. at last, happen to get different type of recipes for a single dish. Finally, combined few of the recipes and made the delicious mouth-watering side dish with paneer
Ingredients to make Paneer Lababdar:
preparation Time: 10 mins | Cook Time: 30 mins
- Paneer Cubes – 100 grams
- tomato – 2 medium
- onion – 2 medium (finely Chopped)
- masala items – bay leaf -1 , cloves – 4, cardamom – 4
- green chili – 1
- turmeric powder -1/4 tsp
- chili powder – 1 tsp
- cumin powder – 1/2 tsp
- coriander powder – 1 tsp
- garam masala powder – 1 tsp
- kasturi methi – 1 tsp
- ginger garlic paste – 1 tbsp
- sugar – 1 tsp
- butter – 2 tbsp
- cashew nuts – 10-12 (whole)
- cumin seeds – 1 tsp
- coriander leaves
- water as required
- salt as required
Method:
- in a vessel, add water (1/2 cup)
- put tomatoes, cloves, cardamom, cashews and salt (1/4 tsp)
- cook for 10 minutes
- turn off flame and cool the mixture
- once cooled, grind it into fine paste
- heat a pan, add butter
- when butter is melted, add bay leaf, cumin seeds and allow it to splutter
- add a tsp of dry kasturi methi leaves, ginger garlic paste
- saute the mixture gently
- add finely chopped onions in the pan. cook for 3-5 minutes or until the onions turn translucent
- add chili powder, turmeric powder, cumin powder and coriander powder
- combine everything together
- add the tomato mixture (we blended) in the pan and mix it
- close with the lid and cook for 10 minutes (saute Occasionally to avoid getting burnt at the bottom)
- add water(1/2 cup) and cook for 5 minutes
- when the mixture is having desired gravy consistency, add paneer cubes
- add garam masala powder and cook for a minute
- Add Grated Paneer (2 Tbsp) In The Pan
- Mix It Once. Let Everything Cook Together For 5 Minutes
- sprinkle coriander leaves and turn off
Paneer lababdar is ready. serve hot!!!
