Malai Kulfi is a simple traditional rich creamy and intense flavorful dessert. This Indian eggless ice cream recipe requires only few ingredients such as full fat milk, condensed milk,sugar and mixed nuts. Saffron strands are optionally used for color. Kulfi can be made without condensed milk as well but adding condensed milk or heavy milk cream gives a creamy rich texture
Ingredients to make Easy Kulfi Recipe:
Preparation Time: 5 mins | Cook Time: 60 mins | Freeze time: 8-10 hours
- Milk- 1 litre (full Fat Whole Milk)
- Condensed milk – 1/2 cup
- saffron strands -10to12
- sugar – 1/4 cup
- mixed nuts(cashew nuts, Pistachio,almonds) as required
Method:
- In a heavy bottomed saucepan/vessel, add milk and boil it for 12-15 minutes
- stir occasionally without burning at the bottom
- after 15 minutes, add condensed milk along with sugar in the pan and mix it well
- Milk Will Get Reduced To 3/4th Now. Add Saffron Strands
- let it boil for another 20 minutes. keep stirring it without getting stuck at the bottom
- Add grounded assorted nuts (Almonds,Pistachio and Cashews)
- allow it to further boil for 20 minutes
- Milk will get reduced to 1/2
- boil for 5 more minutes or until gets rich creamy texture with nice aroma and color
- when milk reduced to half, turn off flame
- allow the mixture to get cooled completely
- Pour into Kulfi moulds/ice cream popsicles. freeze it for overnight/8-10 hours
