Schezwan Fried Rice is a spicy type of rice from indo chinese region. unlike general fried rice, Schezwan fried rice is a spicy and flavourful combination of garlic, ginger, vegetables and red chilies. this recipe includes the preparation of schezwan sauce, cooking basmati rice and finally combining everything to prepare schezwan fried rice. the overall recipe is so simple and can be prepared so quickly
Ingredients to make Schezwan Fried Rice:
Preparation Time: 40 minutes | wait time: 30 mins | Cook time: 30 mins
For Schezwan Sauce Preparation:
- Red Chilies -10
- garlic pods – 1 tsp – finely chopped
- ginger – 1 tsp – finely chopped
- soya sauce -1/2 tbsp
- tomato sauce – 1/2 tbsp
- salt – 1 tsp
- pepper powder – 1 tsp
- sugar – 1 tsp
- vinegar – 1/2 tbsp
- water -1/4 cup
For Cooking Basmati Rice:
- basmati rice – 1.5 cup
- water – 3 cups
- oil – 1 tsp
For Schezwan Fried Rice:
- Schezwan Sauce – 1 tbsp
- cumin seeds – 1 tsp
- onion – 1 medium – finely chopped
- vegetables – 1 cup – carrot, Peas, beans, bell peppers
- few spring onion
- salt as required
Method:
Step 1 – Schezwan Sauce Preparation:
- Soak red chilies in water for 30 minutes
after 30 minutes,
- in a small mixie jar, add red chilies with a tbsp of water
- grind into fine paste
- in a pan/kadai, add oil
- add finely chopped garlic, ginger
- saute it for a minute
- grounded chili paste is added in the pan with 1/4 cup of water
- add soya sauce, tomato sauce, salt, sugar, vinegar and sugar
- Combine It Well
- close with the lid and cook for 15 minutes
after 15 minutes,
schezwan sauce is ready!
Note: schezwan sauce can be prepared in large quantity, stored in air tight container and can be used for 2 weeks
Step 2 – Cooking Basmati Rice:
- pre-soak basmati rice in water for 30 minutes
after 30 minutes,
- in a vessel, add water and boil it
- add soaked basmati rice filtering excess water
- cook for 20 minutes or until rice is cooked
basmati rice is cooked and ready now!
- filter to remove excess water
- add a cup of cold water with a tsp of oil on top
Step 3 – Schezwan Fried Rice:
- in a pan, add oil
- add cumin seeds and allow it to splutter
- add finely chopped onion. saute it for a minute
- vegetables can be added in the pan
- close with the lid and cook for 5 minutes
- add schezwan sauce – 1 tbsp -depending on spicy level
- combine everything together
- close with the lid and cook for 5 minutes
- add basmati rice and mix it gently without breaking the rice
