Ingredients to make Eggless Tutti Frutti Cake:
- All Purpose Flour – 1 cup (200grams)
- Curd- 3/4 cup (150grams)
- Sugar – 3/4 cup (150grams)
- Baking soda – 1/2 tsp
- Baking Powder – 1 tsp
- Vanilla Essence – 1 tsp
- Tutti Frutti – 1/2 cup
- Raisins – 1 tbsp (Optional)Â
- Cranberries – 1 tbsp (Optional)
- Vegetable Oil – 1/2 cup (100ml)
- Salt -1/4 tsp
Method:
- In a small bowl/plate, add tutti frutti, raisins and dry cranberries
- add a tbsp of flour (all purpose flour) and mix it well
- keep this aside
- in a mixing bowl, add curd, sugar, baking soda and baking powder
- whisk it well
- wait for 5 minutes or until see bubbles on top
- add vanilla essence, vegetable oil and all purpose flour (sift it well to prevent any lump formation)
- mix it well using Cut and Fold method (see video for reference)
- add flour dusted tutti frutti, raisins and cranberries
- combine everything together well
- cake batter is ready for baking
- in a baking pan, apply few drops of oil, place baking sheet on top
- transfer the cake batter to the baking pan
- Pre-heat oven at 180C/350F
- place the baking tray inside and bake for 35-40 minutes
After 40 minutes of baking
- Eggless Tutti Frutti Cake is baked completely
Check: pinch with a toothpick, batter should not stick in the toothpick
- Wait for cake to get cool down completely
- slice and enjoy!
