
Sweet Corn Fried Rice is a simple and quick kids favourite fried rice. This recipe involves cooking basmati rice, vegetables, sweet corn, combining with chili sauce, tomato sauce and vinegar. Alternatively, vinegar and chili sauce can be avoided to prepare Corn rice for kids. This recipe can be prepared with same procedure with left over cooked rice. Ingredients to make Sweet Corn Fried Rice:
- Basmati Rice- 1.5 cups (300grams)
- Onion – 1/2 cup
- Garlic – 1 tbsp (finely Chopped)
- Cumin seeds – 1 tsp
- Vegetables – Carrots, Bell Peppers
- Sweet Corn – 1/2 cup
- Spring Onions – 3 tbsp
- Soya sauce- 2 tbsp
- Chili Sauce – 2 tsp
- Tomato Sauce -1/2 tbsp
- Vinegar – 1 tbsp
- Sugar – 1 tbsp
- Pepper Powder as required
- Oil as required
- Water as required
- Salt as required
Method:
- Pre-soak Basmati Rice in water for 30 minutes
After 30 minutes,
- in a vessel, add 3 cups of water
- add soaked basmati rice
- close with the lid and cook for 15 minutes
After 15 minutes,
- filter to remove excess water
- add a drop of oil with a cup of cold water on top
- keep the cooked basmati rice aside
- in a pan/kadai, add oil
- add sugar in the pan, saute it.
- add cumin seeds and allow it to splutter
- finely chopped garlic, onions and spring onions are added now
- saute it well and cook for 2-3 minutes
- add vegetables – carrots, bell peppers, sweet corn in the pan along with required salt
- mix it once
- add soya sauce, tomato sauce, vinegar, chilli sauce in the pan
- combine everything together and cook for 5-7 minutes.DO NOT OVERCOOK VEGETABLES
- after 7 minutes, turn off stove
- add cooked basmati rice and mix it gently
- few pepper powder and sprinkle few spring onions on top
