Paneer frankie or paneer wrap or Paneer Kathi roll is a perfect evening snack recipe. Paneer wrap is mostly like by kids as it contains different flavors. Spiciness can be altered according to choice. the recipe follows step by step instructions along with video with the detailed explanation including preparation of paneer stuffing, frankie masala along with making tortillas. It is one of the best paneer recipes to be tried out on occasions of friends gathering or any potluck. in that case, tortillas can be prepared a day before and Paneer wrap can simply be prepared on that day

Ingredients to make Paneer Frankie:

Preparation time: 10 mins | Cook Time: 30 mins

For Dough Preparation:

  • Refined Flour – 1 cup
  • Salt as required
  • Oil  as required
  • Water as required

For Frankie Masala:

  • Turmeric Powder -1/4 tsp
  • Chili Powder – 1/2 tsp
  • Garam Masala -1/2 tsp
  • Cumin Powder -1/2 tsp
  • Coriander Powder – 1 tsp
  • Chat Masala -1/2 tsp
  • Amchur Powder -1/4 tsp 

For Paneer Frankie Stuffing:

  • Onion – 1 medium (finely chopped)
  • Tomato -2 (grind into puree)
  • Ginger Garlic Paste – 2 tsp
  • Chili Powder – 1 tsp
  • Garam Masala -1 tsp
  • Cumin Powder -1/2 tsp
  • Coriander Powder – 1 tsp
  • Turmeric Powder – 1/4 tsp
  • Capsicum/Bell Pepper (green) – 2 tbsp
  • Paneer Cubes -10-12
  • Heavy Cream – 2 tbsp
  • Salt as required
  • Oil as required

Other items:

  • Onions, chilli sauce, Mayonnaise, Coriander leaves, carrots, cabbage

Method:

Step 1 – Dough Preparation:

  • in a bowl, add flour,salt along with a tsp of oil
  • add water partly and make dough

(Note: 1 cup of flour approximately requires 1/2 to 3/4 cup of water)

  • apply oil on surface
  • cover with a damp cloth. set aside for 30 minutes

Step 2 – Frankie masala:

  • in a dry bowl, add “frankie masala” ingredients
  • Mix everything together
  • keep this ready

Step 3 – paneer frankie stuffing:

  • in a kadai/vessel, add oil
  • add finely chopped onions now. saute it well
  • cook for 2-3 minutes or until onions turn translucent
  • add ginger garlic paste, chilli powder, cumin powder, coriander powder, garam masala along with required salt
  • mix it well
  • add tomato puree in the pan
  • let everything cook together for 3 minutes or until raw smell goes off
  • add capsicums, paneer cubes in the pan and cook for a minute
  • Optionally, add heavy cream. close with the lid and cook for 5-7 minutes on medium flame
  • Paneer frankie stuffing is ready!!!

Step 4 – Making Paneer Frankie:

  • split the dough (we prepared) into equal halves
  • spread evenly in a flat surface using chapathi rolling pin
  • heat a dosa pan. once hot , cook the tortilla
  • add a tsp of butter and flip
  • cook both sides or until both sides turn lightly brown
  • repeat the procedure for remaining dough

now, we have everything ready to make paneer wrap or frankie. check out the video for detailed procedure

  • in a flat surface, place an aluminium foil wrap
  • place a tortilla (cooked) on top
  • add mayonnaise, chilli sauce, onions, paneer stuffing, carrots, cabbage, coriander leaves along with frankie masala
  • wrap it up tightly
  • serve hot!!!
