Peri Peri Pasta is a spicy Desi Style Pasta following very simple steps to make it. This recipe includes Cooking Vegetables of choice, cheese along with preparing Homemade spicy Peri Peri Masala. Spicy Level can be varied according to choice. In This recipe, “Elbow” type pasta is used and the same procedure can be applied for any type of pasta
Ingredients to make Peri Peri Pasta:
For Peri Peri Masala:
- Chili Powder – 2 tbsp
- Cinnamon Powder – 1/4 tsp
- Oregano – 1 tsp
- Black Salt – 1/2 tsp
- Garlic Powder – 1 tsp
- Ginger Powder – 1/4 tsp
- Sugar – 1 tsp
- Salt – 1 tsp
For Pasta:
- Pasta – 1.5 cup -300 grams – (took ‘Elbow’ Pasta here)
- Onion – 1/4 cup -Finely Chopped
- Ginger Garlic Paste – 1 tbsp
- Vegetables – Colored Capsicums – 1 cup, Broccoli – 3-5 florets
- Sweet corn – 1/4 cup
- Pepper Powder – 1 tsp
- Cumin seeds – 1 tsp
- Oregano – 1/2 tsp
- Butter – 1 tbsp
- Milk – 500ml
- Refined Flour/Maida – 3 tbsp
- Peri Peri Masala – 2 tbsp
- Cheese – 1/2 cup (mozzarella)
- Tomato Sauce – 2 tbsp (optional)
- Spring Onions
- Salt as required
- Oil as required
- Water as required
Note: this recipe involves cooking of “Elbow” variety pasta. Same procedure can be followed for any pasta variety in order to make peri-peri pasta
Method:
Step 1 – Peri Peri Masala:
- In a dry bowl, add “Peri peri Masala” Ingredients
- Mix it well
- Keep aside for later use
Note: Peri Peri Masala can be prepared and Stored in air tight container. it can used upto 15-20 days without exposure of moisture
Step 2- Cooking Pasta:
- In a vessel, add water – 3 cups and boil it
- add pasta in the vessel along with a drop of oil and salt
- cook for 10-12 minutes
Note: cooking pasta can be varied with respect to pasta variety. kindly check the cooking instructions to verify the cooking time
Step 3- Cooking Vegetables and Peri Peri Pasta:
- In a pan, add oil
- once hot, add cumin seeds and allow it to splutter
- add ginger garlic paste and saute it once
- add vegetables – 1 cup, broccoli- 3-5 florets and sweet corn – coloured bell peppers/capsicums is take here. any vegetables of choice can be take
- add a tsp of pepper powder along with required salt
- mix everything and cook for 5-7 minutes on medium flame
- after 7 minutes, turn off flame. set this aside
note: make sure vegetables are not OVERCOOKED
- in a pan, add butter – 1 tbsp
- add refined flour/Maida and mix it well in butter
- pour milk -500ml partly. gently combine it with flour forming creamy sauce
- add peri- peri masala – 2 tbsp. mix it well
- cook for 1 minute
- creamy peri-peri pasta sauce is ready now
- add cooked vegetables and cooked pasta in the vessel along with required salt
- combine everything together and cook for 2-3 minutes
- sprinkle spring onions and turn off flame
Spicy and Creamy peri- peri pasta is ready!!!
