The Recipe Follows Quick And Simple Steps To Prepare Dry Fruits, Batter Preparation And Bake It. Recently I Made This Cake For Christmas At Home With The Steps As Below
Ingredients to make Eggless Plum Cake:
For Cake:
- All Purpose Flour – 1 1/2 cup
- Cinnamon Powder – 1/4 tsp
- Ginger Powder – 1/8 tsp
- Orange Zest – 1 tsp
- Baking Powder – 1 tsp
- Baking Soda – 1/2 tsp
- Vegetable Oil – 1/2 cup
- Sugar – 3/4 Cup
- Yogurt – 1 Cup
- Vanilla Essence – 1 tsp
For Soak:
- Orange Juice – 1/3 Cup
- Water – 1/3 Cup
- Lemon Juice – 1 tbsp
- Tutti Frutti – 1/2 cup
- Dates – 1/2 Cup
- Cranberries – 1/4 Cup
- Dry Grapes -1/4 Cup
- Nuts – 1/2 Cup
Method:
Step 1 – Pre Soak Dry Fruits:
- In a medium Sauce pan, add orange juice, water and lemon juice
- add Dry Fruits – Cranberries, Dry grapes/Raisins,Tutti Fruti, Dates
- cook for 5-7 minutes on medium flame. Stir continuously to avoid burning at the bottom
- Turn off flame
- Rest for 4 hours
Note: Grapes Juice or combination of Orange and Grape juice can be used with the same quantity
Step 2- Preparation of Plum Cake batter:
- In a dry bowl/plate, add refined flour,baking powder, baking soda, Cinnamon powder, ginger powder (any spice powder can also be added in mild quantity)
- sift it once to avoid lump formation
- add a tsp of orange zest
- In a bowl, add oil, sugar. mix it well
- add yogurt, vanilla Essence in the bowl
- add the dry ingredients (we prepared) in the bowl
- combine everything together using Cut and Fold method
- add pre-soaked dry fruits and dry nuts (crush into small pieces and add). Reserve a tbsp of dry fruits for topping
- combine the batter along with added dry fruits and nuts
- in a baking pan, place baking sheet ( taken 6*3 inch pan here)
- pour prepared plum cake batter in the baking pan
- layer with dry fruits on top
- tap gently to spread the batter evenly
Step 3 – Bake the cake:
- Pre-heat oven at 160C / 350 F
- place the baking pan in the oven
- bake for 50 minutes to 1 hour
Note: the purpose of baking the plum cake at slightly low temperature is to evenly bake the plum cake
after 1 hour of baking,
take out the baking pan, slice and enjoy!!!
