Pineapple Fried Rice is a quick stir-fry with Thai-inspired ingredients like jasmine rice, curry, bell pepper, pineapple, peas, and vegetables of choice. In this recipe, utilized brown rice instead of Jasmine rice. Sometimes, we can make a good delicious fried rice with left over rice. Sharing the recipe as followed

Ingredients to make Pineapple Fried Rice:

  • Brown Rice- 2 cups
  • Pineapple – 1 1/2 cup
  • Mixed Vegetables – 1 cup
  • Green Bell Peppers- 2 tbsp
  • Orange Bell Peppers – 2 tbsp
  • Soya Sauce- 1 tbsp
  • Chilli Sauce – 1-2 tsp
  • Lime Juice – 1 tsp
  • Cumin Seeds – 1 tsp
  • Garlic pods- 2 (Finely Chopped)
  • Onion – 1/4 cup
  • Coriander Leaves
  • Spring Onions
  • Cashews- 10-12
  • Water as required
  • Salt as required
  • Coconut Oil as required


  • In a pan/kadai, add oil- 2 tbsp
  • add cumin seeds and allow it to splutter
  • finely chopped garlic pods are added. saute it once
  • add onions in the pan. cook for 2-3 minutes
  • Pineapple chunks are added. cook for 5 minutes
  • mixed vegetables, bell peppers are added along with required salt
  • mix well
  • close with the lid and cook for 5 minutes
  • soya sauce, chilli sauce and lime juice is added now
  • cook for 2 minutes
  • add cooked brown rice
  • combine everything together and mix it gently
  • spring onions, cashewnuts and coriander leaves are added
  • serve hot!!!
