
Pineapple Fried Rice is a quick stir-fry with Thai-inspired ingredients like jasmine rice, curry, bell pepper, pineapple, peas, and vegetables of choice. In this recipe, utilized brown rice instead of Jasmine rice. Sometimes, we can make a good delicious fried rice with left over rice. Sharing the recipe as followed
Ingredients to make Pineapple Fried Rice:
- Brown Rice- 2 cups
- Pineapple – 1 1/2 cup
- Mixed Vegetables – 1 cup
- Green Bell Peppers- 2 tbsp
- Orange Bell Peppers – 2 tbsp
- Soya Sauce- 1 tbsp
- Chilli Sauce – 1-2 tsp
- Lime Juice – 1 tsp
- Cumin Seeds – 1 tsp
- Garlic pods- 2 (Finely Chopped)
- Onion – 1/4 cup
- Coriander Leaves
- Spring Onions
- Cashews- 10-12
- Water as required
- Salt as required
- Coconut Oil as required
Method:
- In a pan/kadai, add oil- 2 tbsp
- add cumin seeds and allow it to splutter
- finely chopped garlic pods are added. saute it once
- add onions in the pan. cook for 2-3 minutes
- Pineapple chunks are added. cook for 5 minutes
- mixed vegetables, bell peppers are added along with required salt
- mix well
- close with the lid and cook for 5 minutes
- soya sauce, chilli sauce and lime juice is added now
- cook for 2 minutes
- add cooked brown rice
- combine everything together and mix it gently
Pineapple Fried Rice
- spring onions, cashewnuts and coriander leaves are added
- serve hot!!!
