Vegetable Manchurian Dry/Gravy is a very delicious and mouth-watering recipe to enjoy the vegetables. Dry Veg Manchurian can be used as an appetizer/snack while the manchurian gravy can be served with naan / chapathi or rice. Vegetables can be added as per choice along with maida and corn starch. Make sure that you don’t add excess water as vegetables leave some moisture, just sprinkle water until the mixture begins to hold its shape. If you notice the manchurian balls disintegrating in the oil, then you can add additional maida / all purpose flour and it will bind everything together.Deep fry them over a medium heat
Ingredients to make Vegetable Manchurian:
For Vegetable Manchurian:
- Vegetables
- Carrots(1/2 cup), cabbage(1/2 cup), Beans-10-12
- Chilli Powder – 1/2 tsp
- Pepper Powder -1/4 tsp
- Salt as required
- Maida/all purpose flour – 2 tbsp
- Corn flour – 2 tbsp
- Water (if required)
For Gravy:
- Ginger garlic paste – 1 tbsp
- Onions -1/2 cup
- Tomatoes – 1/2 cup
- Bell peppers- 1/2 cup(green, orange, yellow, red)
- Chilli Sauce-1 tbsp
- Tomato Sauce – 2 tbsp
- Soya Sauce – 2 tbsp
- Corn Flour – 1 tbsp
- Oil as required
- Salt as required
- Water as required
Method:
- In a bowl, add vegetables- grated carrots, cabbage, beans
- add chilli powder, pepper powder Along With Required Salt
- add all purpose flour/maida and corn flour
- sprinkle water if required
(note: vegetables leave water. add water carefully. If in case of more water added, add more corn flour to adjust)
- combine everything together
- take small portion of the vegetable mixture and start making balls
- repeat the procedure and make as many balls as possible
- Vegetable balls are ready for deep frying
- in a pan/vessel, add oil for deep frying
- once hot, gently add vegetable balls in the oil
- deep fry until all sides are evenly cooked
- Take Out And Keep Aside
- Dry Vegetable Manchurian Balls are ready!!!
Enjoy it as such as an evening snack/appetizer
- in a pan/vessel, add oil
- once hot, add ginger garlic paste
- saute it once
- add finely chopped onion. cook for 2-3 minutes or until onions turn translucent
- tomatoes are added in the pan. cook for 3 minutes or until tomatoes turn mushy
- add colored bell peppers/capsicums in the pan
- add chili sauce, tomato sauce, soya sauce along with required salt
- let everything cook together for 5 minutes
- add corn flour water (mix corn flour with a cup of water)
- allow the mixture to thicken
- add vegetable manchurian balls in the pan
- mix well and cook for 2 minutes
- sprinkle few spring onions and turn off flame

Vegetable manchurian is ready!!! serve hot with Naan/Chapathi/Rice
